I’ve decided that I want to get as many Healthy recipes out to everyone as I can! Here are some of my favorites! I will be coming up with more recipes, but please feel free to send me some of your favorites and if it gets chosen, it will go onto this site too! Orange Ginger Chicken Crusted with Coconut

1 orange
ginger finely chopped to taste (about 1-2 TBSP)
1 cup of dried chopped coconut
1 lb of chicken

Take a 9x9 inch glass pan, rub some coconut oil on the inside (bottom and sides). Heat oven to 350*F. Rinse chicken off and try to get the excess water off before putting in the pan. Wash the orange, slice it in half, and with one of the halves squeeze the juice of the orange on the chicken. Take half of the chopped ginger and sprinkle it on the chicken. Half of the coconut should go on the chicken next. Flip over the chicken and repeat the process. After putting on the last of the coconut, squeeze the one of the orange halves to get some pulp on the top of the coconut for decoration and taste! Cook for 30 min or until the chicken is cooked thoroughly.

*If you have a sensitivity to oranges you can substitute it with peach or mango.
*Also good with fish!


 Curried Millet

Prep Time: 5 minutes

Cooking Time: 20 minutes

Yields: 4 servings 

Ingredients:

1 cup dry-roasted millet

1/2 cup crushed cashews

3 tablespoons pumpkin seeds

1 teaspoon curry powder

1 teaspoon grated ginger

1 teaspoon sea salt

2 cups stock or water

Directions:

       1.  Boil the stock or water in a pot.

       2.  Add all the ingredients, bring to a boil, reduce heat to low and simmer for 20-25 minutes, until all the liquid is absorbed.

       3.  Fluff with a fork and serve warm.
